【澳洲】最新UNESCO「創意城市美食之都」就在塔斯曼尼亞 朗塞斯頓&北區地區!

向來都說塔斯曼尼亞的美食多如繁星,比如即捉即食海鮮、優質黑松露菌、皮脆車厘子、極品和牛、營養豐富野生蜜糖等等下刪一萬字……今年11月,聯合國教科文組織終於將朗塞斯頓和塔斯曼尼亞北部列為創意城市網絡(UCCN)中美食範疇的新成員城市,晉身成「創意城市美食之都」(Creative City of Gastronomy),不妨跟著編輯K一起來看看這兩個城市分別有哪些美食精選呢!

朗塞斯頓(Launceston)和塔斯曼尼亞北部(Northern Tasmania)是繼維多利亞州班迪哥(Bendigo)後,第二個澳洲城市和地區獲此國際認證,也是全球第49個「創意城市美食之都」 。獲此銜頭,非只追求食物味道,還要整個地區飲食業都符合入選準則,達致以食物傳遞人與文化和環境的關係,條件包括:

  1. 需擁有多元特色和活力的美食社區,擁有歷史悠久餐廳和名廚;
  2. 在傳統烹調方法中使用本土食材;
  3. 利用現代工業和科技維持製造傳統美食,並令傳統食物製造業得以發展;
  4. 擁有舉辦美食節、飲食業頒獎禮、比賽和廣泛認可美食活動的傳統;
  5. 尊重環境和推廣本地食材可持續發展。

而朗塞斯頓和塔斯曼尼亞北部地區不只符合上列五大條件而獲選,負責向聯合國申請認證的Launceston Gastronomy(朗塞斯頓的美食學)更相信因為在過去15年間不斷改進飲食文化、提升本地食材質素和推行新餐飲管理文化等色色相關,竟能保留農場到餐桌(paddock-to-plate)的習慣,配合優質款待令食客再三回味,逐令區內餐飲業職位逐漸增加,整個社區能享受豐厚成果,同時亦協助推動聯合國倡議的2030年可持續發展目標(UN2030),令北部地區成為一個可持續發展本地食物的地方。所以,簡單而言,實至名歸。

1. 塔斯曼尼亞人愛逛周六市場:豐收市場 Harvest 

豐收市場(Harvest)每逢星期六營業,是個專門販售當地農作物的市場,屢獲選為「Australia’s Outstanding Farmers Market」。塔斯曼尼亞人一直都喜愛駕車來到這裡選購新鮮的煙三文魚、蜂蜜和芝士等食材,然後再步行往附近的卡德奈特峽谷(Cataract Gorge),兼乘坐全球最長的登山吊椅,享受一個舒適且可以親近大自然又有美食作伴的愉快周末。

2. 朗塞斯頓必去人氣河畔餐廳: Stillwater

提到塔斯曼尼亞的夏季裡,重要的節目便是去為期三天的美食節「Festivale」,每年二月首個星期五、六、日舉行,疫情前能吸引逾三萬人參加。始於1988年,與其說是美食節,可能叫嘉年華更合適,集品酒、美食、農產品售賣、名廚教室、音樂表演和各種遊戲活動,適合不同年齡人前來歡渡三天時間。

塔瑪谷葡萄酒路(Tamar Valley Wine Route)是一條沿著塔瑪河兩岸的環形旅遊路線,約長170公里,圍繞塔斯曼尼亞最重要葡萄酒產區塔瑪谷,連接近30個酒窖。大多數葡萄園都有固定時間開放,有些會提供本土食物供佐酒。塔瑪谷雖盛產黑皮諾葡萄,氣泡酒也不斷發展中,值得盡情品嚐。

5. 塔州北部旅遊必去:擁有自家牧廠&芝士廠  Ashgrove Dairy Door & Visitor Centre

6. 逾12英畝大木莓園  Christmas Hills Raspberry Farm Café 

塔斯曼尼亞的莓園多的是,去到北部村莊Elizabeth Town也有個逾12英畝大木莓(覆盆子)園。每年12月到5月是當造期,出產最少20噸木莓,除可親手摘,更可到園內湖畔餐廳品嚐用新鮮木莓泡製的不同口味果醬、木莓酒、調味料和蛋糕等,如果湊巧有人在此舉辦婚禮,還多添一份浪漫滋味!

7. 食物界鑽石--黑松露園 Tasmanian Truffles 

塔斯曼尼亞中北部地區山脈有肥沃土壤,極適合被稱為「食物界鑽石」的黑松露菌生長,1999年澳洲第一顆黑松露菌就在此出生。現在不少松露園已由第二代接手,如位於美麗又歷史悠久的村莊德羅蓮(Deloraine)的Tasmanian Truffles,在黑松露當造的12 月至翌年9月,不止開放農場供參觀和看看如何用狗隻找松露,還會製造黑松露蜜糖、芥末、欖橄油等,包裝精美,送禮自用皆宜。

8. 純淨三文魚和人參場:41° South Tasmania 

有部份德羅蓮地區被聯合國教科文組織列為世界荒野遺產(UNESCO World Heritage Area),內有一個純淨三文魚和人參場,由一對德國夫婦於1998年移民過來是開發的。他們發現南半球緯度41° 地域極適合種植人參,決定以自家農場方法經營種植人參和三文魚,避免土地過分開發,更撥出農場約四分之一土地做人工濕地,讓人可感受原始自然生態,所以獲多項環保認證。入內可看如何治養三文魚和種植人參場,品嚐新鮮三文魚和購買人參製品等。
